David is the System Director of Food and Nutrition Services at Lee Health in Fort Myers, Florida, with over 35 years of experience in the healthcare foodservice industry. He oversees all foodservice operations, clinical nutrition, and an advanced production facility that produces over 18,000 meals across multiple facilities daily.  His commitment to innovation and excellence is demonstrated through implementing innovative service and embracing technology to improve guest and patient satisfaction. David also led the establishment of the first hospital urban garden in Tennessee to receive USDA GAP designation.

David is a past president of the Association for Healthcare Foodservice and a current member of the IFMA Healthcare Foodservice Leadership Council.

In David’s Own Words

How did you get your start in the foodservice industry?

I started my journey in the foodservice industry in the northwest suburbs of Chicago, where I landed my first job at a local pizza restaurant. Beginning as a dishwasher, I quickly became a pizza maker and manager. While working in this restaurant, I discovered my passion for the industry, inspiring me to pursue my college education in hotel and restaurant management.

What do you enjoy most about your career in foodservice?

I have had the opportunity to collaborate and connect with incredibly skilled individuals within the industry. Working alongside these professionals has been inspiring and enriching, allowing me to learn and grow continuously in my role. Additionally, the ability to positively impact someone's day through food is truly rewarding. 

Tell us about a proud moment you've had along the way.

At a previous organization, I emphasized the importance of always doing the right thing to the front-line staff, even without management oversight. Shortly after this staff discussion, a particular incident underscored this commitment when a child's mother approached one of our cooks requesting a food item that was not readily available. Despite the challenge, our cook took it upon themself to fulfill the request. 

Tragically, the patient later passed away due to their illness. However, the cook's proactive and compassionate actions ensured this patient could enjoy the meal they wanted before passing. This experience served as a poignant reminder of small gestures' profound impact on people's lives and reinforced the value of upholding these standards. 

How would your team describe you as a leader?

I’ve often been described as open-minded, willing to listen to different perspectives to embrace change, and a mentor. I consistently challenge the team to prioritize the needs of our patients and customers over convenience when making decisions, pushing us to think critically about our choices. I am deeply committed to empowering the team to grow, excel in operations, and positively impact the industry.

What advice do you have for someone new to the foodservice industry?

I would advise newcomers to the foodservice industry to approach their work with passion and dedication. Remain humble and recognize that there is always more to learn. The foodservice industry is vast and constantly evolving, so stay open to learning from others, even from different market segments. Whether an experienced professional or a fellow newcomer, networking is incredibly beneficial and essential in this industry.

What does being an IFMA Silver Plate recipient mean to you?

Being recognized as the 2024 IFMA Silver Plate recipient in healthcare is an immensely humbling experience. I am inspired to continue striving for excellence and to make a positive difference in the lives of those we serve, guided by the exceptional example set by the previous Silver Plate award honorees.

What is your favorite meal?

Choosing one favorite meal is a challenge, so I must mention two. Having grown up in the Chicago area, I appreciate the crispy, distinctive taste of a Chicago-style thin-crust pizza. On the other hand, the bold and vibrant flavors of traditional Mexican cuisine from a taqueria are equally irresistible. The rich spices and flavors always leave me wanting more, whether it is tacos al pastor or enchiladas. Both are memorable as they remind me of my childhood and spending time with my family & friends.
